Crafty...not so much

The children are tucked cozily in their beds. Brian is at the ball game for boys night out ( he deserves it). The kitchen is cleaned up, the laundry is in the machine, and now I can take a deep breath. That feels good. Hello dear friends.

I'm not much of a crafter. I do enjoy crafts, I've tried my hand at cross-stitch, scrap booking, stamping, and other forms of crafting. It's just not really my thing...I don't have that artistic touch. I do think I have a creative spirit, but it comes out in other ways. In my kitchen, creating a warm and inviting home, creating fun birthday parties for the kids etc...

Usually my creative side comes out all of the sudden. For example a few weeks ago, I got the urge to add some spring touches to our home. I didn't want to go out and spend a lot of money, so I was searching for buried treasure in my closets. Kind of like when you pull out your spring/summer wardrobe and you find pieces you forgot about...always fun! I filled small glass candlewick dessert cups with jelly beans, a found a set of birch bark candle holders and filled them with green moss. My favorite was a small galvanized steel bucket that I filled with dried hydrangeas from the garden.

It was not unusual for me to "find" a treasure chest full of beautiful paper that we had used a few years ago to make masks for a birthday party craft for Katie. I was immediately drawn to them and knew I needed to "craft" something with them. I decided on a making a card. I chose a few "scraps" that I really liked and arranged and glued them on my card. This is what I came up with. I wasn't going for perfection as far as perfect squares or having the pieces lined up just so. I was inspired by a crazy quilt that I bought last summer for $5 at a garage sale last year.



This is my sort of crafting. Being inspired and just going with it. I have a few other ideas floating around in my head right now, a few things I want to craft for friends. I'll share them with you, just don't expect to be wowed! Have a good night!

Daring Baker's challenge



The April 2009 challenge is hosted by Jenny from Jenny Bakes. She has chosen Abbey's Infamous Cheesecake as the challenge.

You may have seen the cute button that I added a few weeks ago for The Daring Kitchen. I follow one of the founder's blogs and decided that I should join. I was a little nervous about this. These people make some really fancy stuff! The challenges are not competitions just a challenge for you in the kitchen. If you are interested in finding out more, or becoming a part of The Daring Kitchen, please visit the website. They are a great group of supportive people, that really want to learn from each other. It also costs nothing to join.

I was somewhat relieved when I saw that the first challenge was cheesecake. I wouldn't consider myself an expert but, I have made plenty of cheesecakes. What really intrigued me about this recipe was the fact that it didn't call for any sour cream, but 1 cup of heavy cream. It also suggested using a water bath. I have also done this before, so I was not to worried about it. I just make sure to wrap my spring form pan with two layers of foil. The recipe is for a vanilla cheesecake and the challenge was to be creative with the recipe. I decided that I was going to make a strawberry-rhubarb glaze for the cheesecake and top each slice with a chocolate covered strawberry. I figured that I wouldn't be able to find fresh rhubarb, but I thought I would be able to find frozen. WRONG!!! Well, I didn't want to go to anymore stores, and I needed to make the cheesecake that night. I thought to myself well, now you are really going to have to be creative. I decided on topping each slice with cocoa flavored whip cream and a white chocolate covered strawberry.

The recipe was really pretty straightforward. I was a little shy about using all light cream cheese after the lemon swirl cheesecake I made for Easter, and because there is no sour cream in this recipe. I decided to substitute 1 bar with the light cream cheese.

I brought my cream cheese to room temp, and helped it out a little bit by sticking it in the microwave for a minute. The recipe came together very well, the batter is quite thin, but I was warned about that. I put it in the oven for 45 mins and then shut the heat off and let it cool in the water bath. I was quite pleased how it came out, a nice creamy color with no browning, and no cracks! I then let it sit on the counter for about 45 minutes to cool down. Well, it was 10:00 pm by this point and I wanted to go to bed. It really should have sat out to cool for a while longer. When I put it in the fridge, I knew there might be trouble in the morning. I had covered it with plastic wrap, and when I pulled it out of course the plastic wrap was full of water and so was the cake. This was easily remedied by patting it was paper towels. I did get a small crack in it about 1/2 inch, but that is what I get for not letting it cool completely. The lemon swirl cheese cake that I made actually had said not to cover it, and I think that is what I might do now on depending what kind of cheesecake I am making. You don't need to worry about the condensation then. I also read that you can cover the pan (not the cake) with a paper towel and then place a plate on top.

I whipped my cream and dipped my strawberries. Brian was dying to have a slice. Even though he is not crazy about sweets he does like cheesecake. I cut us each a slice. I walked over to where he was sitting and he had the most unusual expression on his face. I thought to myself it must be bad, it must taste horrible, what did I do wrong?!?! He looked at me and said "This is the best cheesecake I've ever had!" Really?!?! Then I took a bite, OH MY WORD!!! It really was delicious!! The texture is sooo smooth and creamy, not thick and dry. The cocoa whip cream and strawberry were a nice touch. This cheesecake begs for fruit, so I would definetly make some sort of fruit topping. Like maybe blueberry and lemon or the strawberry rhubarb. If you like cheesecake you MUST make this recipe! I warn you though...it will disappear quickly! I did give five slices to my BFF and her family, but I am embarrassed to say there is only one slice left.

Abbey's Infamous Cheesecake:
crust:2 cups / 180 g graham cracker crumbs
1 stick / 4 oz butter, melted
2 tbsp. / 24 g sugar
1 tsp. vanilla extract

cheesecake:3 sticks of cream cheese, 8 oz each (total of 24 oz) room temperature
1 cup / 210 g sugar3 large eggs
1 cup / 8 oz heavy cream
1 tbsp. lemon juice
1 tbsp. vanilla extract (or the innards of a vanilla bean)
1 tbsp liqueur, optional, but choose what will work well with your cheesecake

DIRECTIONS:1. Preheat oven to 350 degrees F (Gas Mark 4 = 180C = Moderate heat). Begin to boil a large pot of water for the water bath.
2. Mix together the crust ingredients and press into your preferred pan. You can press the crust just into the bottom, or up the sides of the pan too - baker's choice. Set crust aside.
3. Combine cream cheese and sugar in the bowl of a stand-mixer (or in a large bowl if using a hand-mixer) and cream together until smooth. Add eggs, one at a time, fully incorporating each before adding the next. Make sure to scrape down the bowl in between each egg. Add heavy cream, vanilla, lemon juice, and alcohol and blend until smooth and creamy.
4. Pour batter into prepared crust and tap the pan on the counter a few times to bring all air bubbles to the surface. Place pan into a larger pan and pour boiling water into the larger pan until halfway up the side of the cheesecake pan. If cheesecake pan is not airtight, cover bottom securely with foil before adding water.
5. Bake 45 to 55 minutes, until it is almost done - this can be hard to judge, but you're looking for the cake to hold together, but still have a lot of jiggle to it in the center. You don't want it to be completely firm at this stage. Close the oven door, turn the heat off, and let rest in the cooling oven for one hour. This lets the cake finish cooking and cool down gently enough so that it won't crack on the top. After one hour, remove cheesecake from oven and lift carefully out of water bath. Let it finish cooling on the counter, and then cover and put in the fridge to chill. Once fully chilled, it is ready to serve.
Pan note: The creator of this recipe used to use a springform pan, but no matter how well she wrapped the thing in tin foil, water would always seep in and make the crust soggy. Now she uses one of those 1-use foil "casserole" shaped pans from the grocery store. They're 8 or 9 inches wide and really deep, and best of all, water-tight. When it comes time to serve, just cut the foil away.
Prep notes: While the actual making of this cheesecake is a minimal time commitment, it does need to bake for almost an hour, cool in the oven for an hour, and chill overnight before it is served. Please plan accordingly!

Spaghetti with Turkey Meatballs




This is one of our favorite meals. Our kids love pasta...you would think they were Italian. Now, they are not huge fans of sauce, but they love these meatballs on the side. I have adapted both recipes to fit our tastes. The meatball recipe comes from Everyday Food. The marinara comes from Everyday Italian by Giada De Laurentiis.



Turkey Meatballs



1 large egg
1/3 cup milk
1 white onion, finely chopped
Sometimes I add a couple cloves of garlic
1/4 cup plain breadcrumbs
1/2 cup freshly grated Asiago or Parmesan cheese, plus more for serving
1 pound ground turkey




Make the meatballs: In a large bowl, whisk together egg, milk, 1 1/4 teaspoons salt, and 1/4 teaspoon pepper with a fork. Stir in onion, breadcrumbs, and cheese. Add turkey, and mix until combined. Form mixture into 1 1/2-inch balls.

Pre-heat your oven to 350. Place the meatballs on a lightly greased cookie sheet and bake until browned and cooked throughout. This should take 30-40 minutes depending on how big your meatballs are. Watch these closely you don't want them to stick or get burned. When they are finished place them in your sauce and gently spoon sauce over them serve with spaghetti or your favorite pasta.

Marinara Sauce


1/2 cup extra-virgin olive oil
2 small onions, finely chopped
3-5 garlic cloves, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
Directions
In a large pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the carrots, and 1/2 teaspoon each of salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaves. Season the sauce with more salt and pepper, to taste. This makes quite a bit of sauce, I actually double it usually. I put it in to containers and freeze it. Then I have it on hand for whenever I need it.

Fun filled weekend continued

Well the fun filled weekend did not end there. My sisters and our mom have a tradition of celebrating each others birthdays by going out to brunch. We have tried many fun places. I couldn't decide where to go, so Susie suggested Forepaugh's. If you remember, this is where we went for Valentine's Day. We had another wonderful experience. This time we were on the main floor at a corner table. It was quite chilly so I ordered a cup of tea. They brought us a variety of quick breads. We all ordered the eggs benedict which came with fruit and potatoes. Everything was delicious! For my birthday they gave me a chocolate cupcake with chocolate mousse sprinkled with maldon salt. It was good, but we were so full we only ate half of it. We all had a great time, enjoying each other's company. I look forward to this special time together.



Mom dropped me off, and I walked into a very quiet home. What was going on! Brian said Katie wasn't feeling well, and Ian was laying down. Well, Katie started feeling better. Ian on the other had fallen asleep on the couch.

Those of you that know Ian know that he doesn't nap. The child has not napped since he was under two years old. I knew immediately this was not a good sign. I woke him up for family night. We watched Bedtime stories. We thought it was hilarious! After that I checked his temperature, and he had a high fever. Ian rarely gets sick. He has stayed home from school the last two days, but will be heading back to school tomorrow. He kept telling me "Mom, I'm ill, that means I'm sick." What a goof, he still kept his sense of humor even though he was miserable.

Fun filled weekend



Last summer mr. amazing put in a fire pit in our backyard. The children having been pleading with us to have a fire outside for weeks. We told them that Friday night it would probably be warm enough to do so.





Well, it was so nice outside I decided that we should have our first picnic of the year. We looove picnics, and find any excuse to eat on our porch, in the backyard, or at the park.












We had a little visitor. She didn't stay long...too many scary children.









Can we have a fire in the backyard is code for can we have Smore's?









Saturday was our HOT DATE! In celebration of Brian's birthday.
I dropped the children off at Amachi and appachen's for a sleepover. Then we headed out to Stillwater for some cast-iron pan hunting.



No luck at the first store.





We didn't have lunch so we decided to spilt a hot dog. I did not consume any of those scary looking peppers.




We continued on, and we did actually find a mate for his pan. We went a little further and he found one of those old-fashioned pencil sharpeners. You know the ones that you had in your classroom that were on the wall. We now have one of those in our basement. Then we went a little further and he found another pan for his set. He now has a litle family of pans. They already have had their first "spa" treatment with him. Once they are all spiffied up, I'll show them to you.




Then we came home and got all gussied up for our dinner. I wore my new sassy top and found some red lip gloss. I made reservations at Barbette per his request. I had never been there before, so I was excited to try out a new place. This restaurant is very fun, loud, and trendy. The decor is very bright, and they have local artist's work on the walls. Our waiter came over and asked us what we would like to drink. Brian ordered some kind of beer and I ordered a French white. He then just stood there like we were supposed to be doing something. Then he looked at me and said could I please see your I.D. WHAT?!?!? I couldn't believe it! Brian was laughing, he thought it was so funny. He said to our waiter the funny thing is she is actually two days older than me. Our waiter was probably 24 years old. I politely handed him my license and looked at him and said I'm 38. Didn't we go through this a few weeks ago! I mean really, I was actually embarassed. Who gets carded at 38?!?! Brian said to me after the left "I'm just rockin' the cradle of love." Whatever...dear. Anyways...there are worse things in life. I just have a complex about looking young. When I was growing up people always thought my younger sister Susie was the oldest. It's not that I want to look old, but I don't want to look that young!



Anyway back to our date. We were in a little corner booth, so he sat right next to me. We were nice an cozy.




We started out with the warm olives and bread. Very good! Those little guys were very warm.



Brian had the steak frites. He said the steak was really good. The fries were the perfect consistency, but a little salty.




I had the shrimp risotto. It had peas, fennel, and tomatoes. It was cooked perfectly and was super creamy. I loved it.

For dessert we shared the white chocolate and chambord pots de creme. We were there for a couple of hours. We had a great time, and would highly recommend it for a fun date!

The Perfect Day

It started by taking the day off. I had asked mr. amazing if he would take the children to school so I could sleep in. He said "I can do that." I did sleep in until 7:00 when Ian decided to come and snuggle with me and ask me for a bowl of frosted flakes. I got up and Katie looked at the lunch menu and said "Mom, they are having Thai peanut noodles for lunch today." Neither of the children like this dish, so I frantically made them cold lunch before they headed out the door.
As the suns rays streamed into our living room I sat in a chair with my lap top. I checked my e-mail, fb, and one of my favorite blogs. Then I decided it was time to get going. I took a nice, long , quiet shower got ready and left for some shopping.



I stopped by some vintage shops and found this cute faux fur vest for $15, I couldn't resist. The picture doesn't due it justice, it is adorable!


Then I went to Patina and found this adorable votive holder for $5. I'm going to use it in my summer decor.

Then I went to Elizabeth's shop ( she's my youngest sister) Picky girl. We chatted, and I browsed, and I showed her my new "fur". Then I went a couple of doors down to another shop and chatted with the owner who is a friend.

I was tired of shopping and I was ready to go back home. I pulled into the driveway, and mr. amazing's car was there. He crashed my party! He had taken the day off and was running around town getting things for my special dinner.

I decided I wanted to read some more of my book Sarah's Key for book club. I snuggled under my favorite blanket and read to my heart's content. He picked up the children from school and made the dinner I requested.

It was sooo yuuumy!! I'm having leftovers for lunch. Brian's bleu cheese burgers are one my favorite things he makes! I'll give you the recipe someday.

It was such a gorgeous day out. Warm and sunny! I wanted to go for a walk around the lake. It was so pretty! We saw all sorts of birds, ducks, and 3 wood chucks. We went right up to one! I love my neighborhood.


We then came home for cake and ice cream and birthday wishes. We have a tradition that after the birthday person makes their wish, the rest of the family all makes a wish for them.

Ian: " I wish for mom to be pretty."
Katie: "I wish for mom to have the strength to do all the things that she does for us, and I will help her if I don't have anything else to do."
Brian: "I wish for her to have fun and be happy."



We prayed with the children and tucked them into bed. I went back into my little chair and started reading again for awhile. Then Brian said it was time to go to bed.

2 things




First off I need to give a shout out to my BFF Jen (or Jen nay nay, as Brian likes to call her). It is her BIRTHDAY today!! Jen and I have been friends since we were 12. If you know how old we are you know that we have been friends for a very, very long time. She is a true TREASURE! I hope you are having a SUPER day !! LOVE YA, friend.





Second of all I wanted to give you my recipe for the LEMON SWIRL CHEESECAKE. I changed this recipe quite a bit from the original . It looked pretty and tasted really good, but it had it's share of problems. I decided I wanted to make a gingersnap crust. Katie made this with my supervision. I buttered my springform pan and put a piece of parchment on top and buttered that as well. As it was baking all of the sudden there was smoke coming out of my oven. I could hardly believe this, because mr. amazing had just cleaned the oven the day before. It was so much work to push that "self clean" button...that is why he is mr. amazing! Anyways back to the smoke. I take a peek in and it looks like there is a small amount of water on the bottom. What in the world is that, and where is it coming from.! Well we figured out it was butter coming out from my crust. I stuck a pan on the rack underneath it to help. We proceeded with the rest of the recipe and it seemed fine. The next day is where the trouble started again. It was very difficult to cut! The crust was pretty much stuck to the pan, and the cheesecake was not cutting nicely. It was fine, because it was for family. I give you this recipe with some caution. DO NOT make my version of the crust or the cake. I would look for some other recipes for gingersnap crusts. The King Arthur flour website has a good one that I used for Thanksgiving. I would maybe use 1 8 oz. package of regular cream cheese and 1 light next time. I'm not willing to give up on this recipe, because it was soooo good!! Despite the fact that it didn't look pretty on the plate it tasted very good!! If you are a lemon lover and you like to experiment with recipes I would encourage you to try this.

Crust
Find a good gingersnap crust recipe.

Filling
2 8-ounce packages cream cheese, room temperature (light)
3/4 cup sugar
1/2 cup frozen lemonade concentrate, thawed
2 teaspoons grated lemon peel
3/4 cup sour cream (light)
2 large eggs
Topping
1 cup light sour cream, room temperature (mix with 1 tsp. vanilla and 2 tbs. sugar)
1 11 1/4-ounce jar purchased lemon curd
2/3 cup chilled whipping cream

For filling:Using electric mixer, beat cream cheese, sugar, lemonade concentrate and lemon peel in large bowl until smooth. Beat in 3/4 cup sour cream. Add eggs 1 at a time, beating just until combined. Pour filling into crust. Bake until center moves only slightly when pan is shaken, about 50 minutes. Transfer cake to rack; cool 5 minutes.
Meanwhile for topping:Whisk 1 cup sour cream in small bowl until very smooth. Whisk lemon curd in another small bowl until very smooth.
Run small sharp knife around sides of cake. Starting at outside of edge of cake, spoon small alternating dollops of sour cream and lemon curd side by side in concentric circles atop warm cake, covering cake completely. Gently shake pan to smooth out toppings. Using tip of knife, gently swirl toppings, forming marble design. Chill cake uncovered overnight.
Using electric mixer, beat cream in medium bowl until stiff peaks form. Spoon cream into pastry bag fitted with medium star tip.
Run small sharp knife around sides of cake to loosen. Release pan sides of cake to loosen. Release pan sides. Transfer cake to platter. Pipe cream in decorative scallop border around top edge of cake.

Happy Easter!

Holy Week

On the first day of the week, very early in the morning, the women took the spices they had prepared and went to the tomb. They found the stone rolled away from the tomb, but when they entered, they did not find the body of the the Lord Jesus. While they were wondering about this, suddenly two men in clothes that gleamed like lightning stood beside them. In their fright the women bowed down with their faces to the ground but the men said to them, "Why do you look for the living among the dead?" He is not here; he has risen! Remember how he told you, while he was still with you in Galilee: The Son of Man must be delivered into the hands of sinful men, be crucified and on the third day be raised again. Then they remembered his words.

He died so we could have eternal life with him. What amazing love he has for his. Rejoice in his indescribable gift to us!

Glitter eggs




Well we made them, and I would make them again, but not with the kids. I blew out the eggs, which of course made them more fragile and difficult for the kids to work with with. Katie was getting frustrated that her egg was not getting glitter all over it. Ian kept asking "when do we get to eat the eggs?" "Well, you don't get to eat these honey, because this is just the shell." I ended up hard boiling a bunch of eggs in the evening, and made deviled eggs for the kids. Oh well, you live and learn. I don't think they really minded. It was such a beautiful day! They had so much fun playing outside and on the front porch.






I really did like they way the eggs turned out. A couple of weeks ago I took the kid's to the craft store to pick out glitter. They didn't have too many colors in the regular glitter They picked out red, sliver, and gold. Martha Stewart's line had probably 15 different colors to choose from and they picked out a dark pink and a purple. For this type of project Martha's glitter works much better. It is very fine like sand, and gave the egg a more even coat. Mind you this glitter is at least twice as expensive. I think it was worth it though. I plan on saving these eggs. These is really an inexpensive way to decorate for spring. Especially when eggs are on sale. I think I might trying painting some in some light shades (pink, blue, tan). I didn't have an easy time blowing out the eggs. I even used a nasal aspriator. Brian asked why I just didn't blow them out. Yuck! I think I would get sick from the smell.







I gotta run Mr. Ian is insisting I read him "Olivia and the Missing Toy."
Holy Week

Joseph took the body, wrapped it in a clean linen cloth, and placed it in his own new tomb that he had cut out of the rock. He rolled a big stone in front of the entrance to the tomb and went away . Mary Magdalene and the other Mary were sitting there opposite the tomb. The next day, the one after Preparation Day, the chief priests and the Pharisees went to Pilate. "Sir," they said, we remember that while he was still alive that deciver said, 'After three days I will rise again.' So give the order for the tomb to be made secure until the third day. Otherwise, his disciples may come and steal the boday and tell the people that has been raised from the dead. This last deception will be worse than the first." "Take a guard," Pilate answered, "Go, make the tomb as secure as you know how, " So they went and made the tomb secure by putting a seal on the stone and posting the guard." Matthew 27: 57-66
