I've taken an unintentional break from social media. It just kinda happened, and it probably isn't over yet. Life just gets busy, and spending more time on the computer hasn't been appealing. I've missed all of you though!

Seasons of Giving

For some time now, I have been thinking about doing a series of posts on preparing for the holidays.

I was somewhat stumped though on what I wanted my focus to be about.

Yesterday's church service inspired me.

GIVING

Life can be rather hectic. We can get really caught up in our own lives, and forget what is going on around us. As we wind up 2011, I want to encourage myself and my family to give of their resources, time, minds, and hearts.

Now, many of these posts are going to be really practical. For example you may question what cleaning out the oven has to do with GIVING. My hope is that you and I will be able to fully enjoy the exciting seasons ahead because our hearts and minds will be focused on GIVING.
I'm looking forward to putting these posts together. I think we will be able to encourage and give each other lots of great ideas!

I'm tired, overwhelmed, and exhausted. I could go to sleep right now. We've had too many long days and late nights. I just need to make it through tomorrow. I'm not complaining, it's just the way it is.

Katie had her first swim meet a couple of days ago. It went well.

Open houses for both children tonight.

I'm looking forward to a nice long weekend, full of projects. A new"regular" routine will start next week, which will be really nice for me.

Lazy dayz

Mira the fish

Katie has been gone at camp this week. It's so quiet just having one child here. Well, for the most part.

Ian and I went to the pool with the Susie, Tyler and Mira yesterday.

The children splashed around in the pool, while Susie and I chatted about books, recipes, movies, and parties to come.

Afterwards we dropped by their home, because I had to try this pie that Susie made. Um...yum. If you like chocolate and peanut butter make this pie.

The weekend kind of snuck up on me. I haven't talked with Mr. Young about what we are going to do, besides picking up Katie.

I started painting a couple pieces of furniture and it would be nice to finish that up.

Maybe a trip to the farmer's market.

I need to check our school supplies.

We work on them usually in the morning, but not everyday.

Kindness

As a wife some days I find it really hard to be an encouragement to my husband. How about you? I can get so caught up in the little nit picky details of life. Like where the glasses are left, dirty clothes are put etc. and etc. You know what I'm taking about right? It is much easier for me to complain to one of my girlfriends about these "hardships" than think of the other 99% of wonderful ways my husband blesses me.

So today, I want to publicly say to you Brian thank you for re tiling the shower on one of the nicest weekends of the year. Thank you for making dinner, when I've been at work all day. Thank you for putting fresh sheets on our son's bed so I don't have to change all of the beds.

Thank you for your never ending kindness.

Most of all thank you for helping me make our house a home. A place of refuge for our family.

Thank you for holding my hand and walking this journey with me, side by side as partners.

He's back

I'm happy to report that he had a great time!

Everything that he packed came back.

He even took a shower and changed you know what everyday.

I'm impressed.

He swam.

He went on a canoe ride.

He sang Pharaoh, Pharaoh (if you went to church camp you know what I'm talking about).

They used the same ingredients as me, and apparently the food was as good as mine. I'm not sure how I should feel about that.

He got pop, candy, and ice cream to his heart's content.

Our little guy is growing up.

He might even go again next year.

Welcome back little buddy, were so glad you had a great time!

Bedtime stories

Ever since the children were babies Brian and I read to them every night. It was something that we all looked forward to. As Katie and Ian became readers, they started having reading time by themselves before bed.

Having that one on one time with the children was something I missed. When I watched the story of the Father that read to his daughter every night until she left for college, I thought to myself you are never to old to be read to.

I made a declaration to my family that we would be having bedtime stories again.

Brian and Ian are reading the Hobbit. Katie and I are reading the latest Penderwick story.

I can't believe how much we are all enjoying this. I wish we had never stopped. Once school starts, I'm sure that we won't be reading every night, but we certainly will be making a habit of it.

Did you read to your children when they were younger? Do you still?

Friends...

Since 1999 my college roomies and I have been getting together every other year. We all try our best to make it and sometimes it doesn't happen. This year one of the girls couldn't come, she lives over seas and it just wasn't possible. We missed her dearly, but we were able to skype which was almost as good. We spent the good part of one day at the arboretum. It was sticky and hot, but beautiful. I feel blessed beyond measure to have these girls in my life. They are so special to me. God has given me such wonderful treasures.

So Mr. Young got really lucky. He gets to see U2 this weekend. They're probably his favorite band.

When I was pregnant with Katie I was actually induced the day before the concert, so Brian could go see the boys.

Yep, his favorite.

He's going with Susie, Ron, and Tyler. The same people he went with last time, except Susie was seven months pregnant with Tyler. We claim that is why Tyler has been so obsessed with U2 since he was really little. Needless, to say I'm not sure who is more excited Tyler or Brian.

So welcome to our new site!

It might not look really different right now, but I have changed things up a bit.

You are used to finding stories about our family, recipes, encouragement, and living ideas all right here.

Now Young Adventures is 4 blogs in 1. Up at the top you will see some new tabs. If you click on kitchen, dwell, and faith that will take you to the new areas of the site.

Here at Young Adventures (family) everything will be posted about the family. In the kitchen section will be recipes and kitchen tips. Dwell will be focused on home decor/garden/fashion/beauty and other miscellaneous subjects. Faith will hold bits of encouragement and we will talk about our faith journey there.

Each category has tabs on the top so you can easily get to any area of the site that you would like.

A new look

Awhile back I had mentioned that I was thinking about changing Young Adventures a bit. Many of you were so kind in giving me suggestions.

So I'm taking a baby step and things are going to be a little bit different. I know that change can be hard, but it can also be very good and that's what I'm hoping for.

In order to make the transition I am going to need some extra time. So I won't be blogging for the rest of this week and next.

Now, you might be wondering what this photo has to do with this post. Well, actually nothing. Brian and I made these oven-fried onion rings from Cooks Country awhile back.

We were not impressed. They were a lot of work for nothing. These onion rings are not low fat, but are supposed to eliminate the mess that deep fat frying creates.

We decided if we want to eliminate a mess from our kitchen we'll go out to eat.

Thank you so much for all of your Anniversary and Birthday wishes. Ian was especially fascinated with all the Birthday greetings from people he didn't know. He thought it was the coolest!

I have a little favor to ask. Katie is having oral surgery this morning and we could use some prayers. She is having three permanent teeth removed. Not enough room in her mouth for all of those teeth! I would really appreciate it.

Iced Chai

My Mom makes amazing chai. I wanted a recipe for an iced version, and this is what the two of us came up with.

Iced Chai

8 cups of water

12 tsps. black loose tea

1/2 cup honey

1 stick of cinnamon

1/2 inch fresh ginger peeled and rough chopped
4 whole cardamon pods

First put the ginger in a saucepan and mash it up slightly with the back of a wooden spoon. Put the remaining ingredients except the tea in a saucepan and bring to a boil. Turn the heat down and add the tea, simmer for 3 minutes. Remove from the heat and strain into a heat proof pitcher. Chill until cool. When ready to serve put equal parts milk and chai in a cup. If you like add ice as well. If you are planning on sipping over a longer period of time you may want to omit the ice as it dilutes the drink. You can keep this in the refrigerator for up to a week.

Lark Rise to Candleford

So Katie and I have become a little obsessed with this series, o.k. maybe a lot!

It is so good and we can't seem to get the discs fast enough through netflix.

Here is a little summary of what the show is about. If you're interested take a peek.

The series is set in the small Oxfordshire hamlet of Lark Rise and the wealthier neighbouring market town of Candleford towards the end of the 19th century. The series chronicles the daily lives of farm workers, craftsmen, and gentry, observing the characters in loving, boisterous, and competing communities of families, rivals, friends, and neighbours.
The narrative is seen through the eyes of a teenage girl, Laura Timmins (Olivia Hallinan), as she leaves Lark Rise to start a new life under the wing of her cousin, the independent and effervescent Dorcas Lane (Julia Sawalha), who is Post Mistress at the local Post Office in Candleford. Through these two characters, viewers experience the force of friendship as Laura and Dorcas see each other through the best and worst of times. ~Wikipedia

Butterscotch Tart

I first heard about butterscotch pie when I met Brian's family for the first time. His Dad had picked us up from college and we were going to spend the weekend with his family.

We were almost there and they had some sort of radio thing in their car where they could communicate with whoever was at home. These were the days before cell phones.

I'm not sure who called who, but the conversation turned to food. Brian's Mom was on the other line and asked him "guess what I made you for dessert?" He said "butterscotch pie." Well, it was actually apple but the meal was delicious.

So apparently this pie was his favorite and I had it couple of times with his family. I thought it was pretty good.

I'm actually somewhat surprised that Brian loves this pie, because it is really pretty sweet.

So for Father's day I wanted to make Brian this pie, but I needed the kids to like it too. I decided I would make it with a graham cracker crust in a tart pan.

Honestly, I wasn't crazy about this. The kids loved it and Brian thought it was pretty good. Even though he didn't say it, he missed the pie crust. I think next time I would try a chocolate crumb crust, but the kids can't understand why I would do this, because in their minds it was perfect.

Butterscotch Tart

6 tablespoons butter
6 tablespoons all-purpose flour
1-1/2 cup packed brown sugar
2 cups milk
1/4 teaspoon salt
3 eggs yolks, beaten
1 teaspoon vanilla extract
1 pastry shell (9 inches), baked

MERINGUE:
3 egg whites
1/4 teaspoon cream of tartar
1/2 cup sugar

1 graham cracker crust

In a saucepan, melt the butter. Remove from the heat; add flour and stir until smooth. Stir in brown sugar. Return to heat; stir in milk and salt until blended. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir about 1 cup hot filling into the egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes longer. Remove from the heat. Gently stir in vanilla. Pour into graham cracker crust.
For meringue, beat egg whites and cream of tartar in a small bowl on medium speed until soft peaks form. Gradually beat in sugar, about 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread evenly over hot filling, sealing edges to crust.
Bake at 350° for 12-15 minutes or until meringue is golden brown. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers

His last day of vacay

It's Mr. Young's last day of vacation today. So I'm posting this red rose for him. Red roses are his favorite, did you know?

He works so hard. The next two months are going to be rough. Part of the project he is working on is ready to launch. Lots of pressure, stress, and deadlines can make a man a little bit cranky. I'm praying for extra patience. If you remember please pray too, I'm gonna need it!

Today he is golfing with Mr.Buckman. It's a beautiful day here. I hope they really enjoy the sun.

We're celebrating our anniversary this weekend, 18 years. We were babies when we got married. Right out of college. Part of being a good husband is telling your wife when she has lipstick on her teeth, don't you think?

I'm hoping to post recipes next week. Life gets busy in the summer. It's a more relaxed busy, but I haven't spent much time on the computer. I'll do my best.

Watermelon Mojitos

It's cool and rainy here, but I know for many of you it is hot and dry.

One of our local grocery stores has had whole watermelons on sale for the past few weeks. Brian loves watermelon so we have had A LOT of the juicy stuff here.

In an effort to use some of it up. I remembered this recipe from the Barefoot Contessa, and decided to make it last week for date night.

This is the perfect drink for a hot summer night. Cool, fruity, and refreshing. Mix up a batch, and enjoy.

Watermelon Mojitos

We like our drinks really cold. I keep my simple syrup in the fridge and rum in the freezer before I make start the recipe. This makes about 3 drinks.

15 fresh mint leaves

Watermelon, seeded, rind removed and cut into chunks (enough to make one cup of puree)
6 ounces light rum
1/2 cup simple syrup
3 tablespoons freshly squeezed lime juice
ice
Sprigs of mint (optional)

Place the mint leaves in a pitcher and crush with a wooden spoon. Put the fruit into a food processor or blender and puree. Pour the watermelon, rum, simple syrup, and lime juice into the pitcher and stir to combine.
Place ice cubes in 2 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint. Serve ice cold.

Tuna Nicoise Platter

I hope that everyone's week has started off well. Mr. Young is home this week, and I'm trying to spend as much time with him as possible.

The majority of our family like this salad and I try to make it a few times a year. I think it is especially nice in the summer. When produce is at it's best.

The other great thing about this platter is that my family can take less or more of what they love to their individual plate.

I hope you enjoy it as much as we do.

Tuna Nicoise Platter

I used canned tuna here for an economical option. But fresh tuna steaks on the grill or shrimp would be excellent!

2 cans of tuna (the smaller size)

2 medium size tomatoes cut in wedges

2 hard boiled eggs cut in half

1 cup Kalamata olives

1/2 pound green beans

Green leaf lettuce

French potato salad (recipe below)

1/4 cup extra virgin olive oil

1 tablespoon dijon mustard

1 tablespoon or a bit more of sparkling wine (if you don't have any feel free to use lemon juice or a mild vinegar

salt and pepper

Arrange the tuna, tomatoes, eggs, olives, green beans, lettuce, and potato salad on a large platter.

Combine the dijon, wine, and salt and pepper. Slowly whisk in the dijon until in emulsifies. Drizzle a little over the vegetables and fish

serve the rest in a small pitcher on the side.

French potato salad

1 pound small red boiling potatoes
4 tablespoons dry white wine
1/2 teaspoon Dijon mustard
kosher salt
freshly ground black pepper
1/4 cup extra virgin olive oil
1/4 cup minced scallions (white and green parts)
2 tablespoons minced fresh dill
2 tablespoons julienned fresh basil leaves
Drop the red potatoes into a large pot of boiling salted water and cook for 20 to 30 minutes, until they are just cooked through. Drain in a colander. As soon as you can handle them, cut in half (quarters if the potatoes are larger) and place in a medium bowl. Toss gently with 2 tbs. wine. Allow the liquid to soak into the warm potatoes before proceeding.
Combine the remaining wine, mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper and slowly whisk in the olive oil to make an emulsion. Add the vinaigrette to the potatoes. Add the scallions, dill, basil, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and toss. Serve warm or at room temperature.

Happy days

The first two days of summer break have been a dream.

The children and I have been really enjoying these days. Keeping busy is key in our home, but we also like to have a lot of "relaxing" time.

This is what we have been doing:

Library with the cousins

A visit with the dentist

Target run

We made someone some special sauce

A gorgeous walk around the neighborhood that ended quickly with someone falling and getting a little scraped up

A quiet afternoon filled with reading

T.V. time

Next week starts swimming lessons and Mama's summer academy.

We have a couple of parties that we are attending this weekend. Of course "Father's day weekend" started here as well.

I have quite a few recipes that I have to post, so hopefully I will get to that next weekend. What are your plans for the weekend? How do you like to celebrate Father's day?

Ten things to make me feel good about my summer days

I was reading C.Jane's blog the other day and she wrote about 10 things that made her feel good about Mothering.

I decided that I would come up with a list of ten things that would help me stay centered and feel good at the end of each day.

Here it is:

1. Talk to God and read the Psalms before I rise.

2. Feed my family two delicious and healthy meals everyday. The other meal may or may not be delicious, healthy, or even made by me.

3. Read from my reading list.

4. Wash, dry, fold, and put away one load of laundry.

5. Get outside.

6. Take at least one photo.

7. Spend quality time with my children.

8. Make sure the kitchen is clean before my head hits the pillow.

9. Encourage my husband.

10. Listen to pretty music.

Strawberry Rhubarb Crumble

Yesterday was a terrible, horrible, no good very bad day.

I sent Mr. Young a text "I'm in a FOUL mood." I like to give him the heads up so he knows what he's getting into. I'm good like that. When he got home I told him I made a strawberry rhubarb crumble and I was having it for dinner and dessert. I'm planning on having it for breakfast too. I don't care if I gain five pounds. O.k. maybe I do, but not until tomorrow.

Anyways...some little guy is having a birthday party this weekend.

What are you all up to this weekend? It's going to cool down here for a couple of days, so I hope to get some more baking in.

Oh, I need ideas for a retirement gift for Ian's teacher. She is pretty much amazing, and we want to get her something special. She is retiring after 30 years or something like that. Any suggestions? Thank you!!

Strawberry Rhubarb Crumble

2 cups sliced fresh or frozen rhubarb
1 cup fresh strawberries sliced
1/3 cup sugar
1/2 tsp. ground cinnamon
1/2 cup all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
4 tbs. butter
2/3 cup packed brown sugar
2/3 cup quick-cooking oats

Place the rhubarb and strawberries into a greased baking dish. Combine the sugar and cinnamon, sprinkle it over the rhubarb. Set it aside. In a bowl, combine the flour, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in brown sugar and oats. Sprinkle over rhubarb mixture. Bake at 350 for 40-50 minutes or until lightly browned. Serve warm with a scoop of ice cream or whipped cream if desired.

Yesterday we were the HOTTEST city in the Nation. 102 degrees friends, I know crazy!!

So, for the last couple of days we have been eating salads for dinner, quick, easy, and light.

You may remember awhile back I did a review for Cheftalk on Ellie Krieger's book So Easy. It had a pretty good taco salad recipe in it that everyone in the family liked.

I decided to put my own spin on it and everyone gobbled it up.

If you are looking for a nice summer dinner this is a great one. Get your kids involved in prepping the ingredients. They can help with crushing chips, shredding cheese, etc...

It's cooling down here now,thankfully. When I stepped outside this morning I drank in the fresh air.

Lighter Taco Salad

Meat:

1 pound ground chicken or turkey

1/2 cup of dried beans soaked and cooked or one can of low sodium black beans,drained and rinsed

2 cloves of garlic minced

1/2 cup of water

1 tablespoon chili powder

1/8 teaspoon cayenne pepper

1 teaspoon of cumin

Dressing:

3 medium tomatoes, chopped

2 tablespoons of extra virgin olive oil

2 tablespoons of fresh lime juice

1/4 cup of chopped cilantro

1 tsp. kosher salt

fresh ground pepper

Salad:

1 head of romaine lettuce, chopped

1/2-1 cup grated cheese

Crushed tortilla chips (baked variety if you like)

2 cups of cooked corn

2-4 green onions chopped

Heat a large skillet over medium high heat. Add the chicken and cook until it is no longer pink, breaking it up into pieces. Add the beans and garlic and cook for a couple of minutes more. Add the water and spices and mix until well combined. Remove from the heat and set aside to cool a bit.

In a medium bowl, combine the tomatoes and their juices, oil, lime juice, salt, pepper, and cilantro. Set aside until ready to serve.

To assemble place two large handfuls of lettuce on each plate. Top with the chicken mixture, sprinkle with cheese, green onions, and corn. Place tomato dressing on top and sprinkle with chips.

Enjoy!

Frozen Hot Chocolate

Before I get to this recipe, I wanted to say thank you. Thank you so much for your comments I love hearing your thoughts, they inspire and encourage me. Your compliments are so thoughtful and kind and really brighten my day.

I number of you have asked questions about the photos on our blog and I wanted to make sure to answer those.

99.9% of the photos on our blog are taken by one of us. Usually that means I'm behind the camera, but if it is not I usually will let you know. It is pretty rare that I will post an image from someplace else, but occasionally I do. Again, I will let you know if I do. Those images I "borrow" are usually photos of beauty products or some sort of graphic. I did "design" the summer gatherings though.

All the photos we have taken up until about three weeks ago were with a point and shoot, which we loved.

Recently we purchased a Nikon D5100 and so far so good. I'm trying to learning how to use this camera, so for me that means moving it off the auto button. I'm not at manual yet, but hope to get there.

I really have no idea what I'm doing and I just shoot what looks good to me and sometimes I get lucky.

I don't style any of our food shots, for two reasons. I want the recipes to look good, but also accessible to you. I don't want it to like like it is from a magazine, but like something we just made in our kitchen, because that is what it is. Whatever I have posted is our dinner or dessert, so I don't have a lot of time to take photos. I usually take 3-5 shots and then ask Brian to pick which one he likes best and that's the one that gets posted.

That doesn't mean I don't like food styling. I love looking through food magazines and your blogs that have gorgeous photos of the food you have prepared!

It's just for now, we have to keep things simple here.

So, thanks again for your sweet words they encourage me to keep practicing.

Now on to this recipe. I saw it awhile back in the blog world and knew I wanted to make it. Yum, right? It is incredibly hot here right not so I thought it would be perfect. Bri and I thought this was really good, but the kids didn't like it at all. They thought it was too bitter. So I'm giving you the recipe a little apprehensively. There is some tweaking that I will be doing with this one, but I'm certainly not giving up.

Frozen Hot Chocolate

Here are some of my ideas that I would like to try. Omit the butter, cut back on the cocoa or use a hot chocolate mix. I would encourage to google frozen hot chocolate. It was made famous by a restaurant in New York. There are a number of recipes that will give you a place to start. The consistency is perfect, I just need to tone done the bitterness.

3 Tbs. granulated sugar

3 Tbs. dutch process cocoa

2 Tbs. unsalted butter

2/3 cup of semi-sweet chocolate chips

1 1/2 cups of skim milk

Whip cream

chocolate chips

4 cups of ice cubes

Combine the sugar, cocoa, and butter in a double boiler over simmering water. Stir until a smooth paste forms. Add the chocolate chips and stir until melted. Add 1/2 cup of milk and stir until combined. Take off the double boiler and cool to room temperature.

Combine the chocolate mixture the remaining milk and half of the ice in a blender. Blend until smooth and then add the remaining ice and blend again until smooth. Top with whip cream and chocolate chips. Enjoy!

Red and Blue Tart

I'm not sure how I should start this post..."go make this", "I got my kids to love a fruit dessert","this is the tart I made for Memorial day"

I can't decide so all of the above.

I wanted to make a fruit tart that my family would love. Katie and Ian don't like pie crust so I was thinking more of a cookie like crust. Pastry cream for the filling. Fresh fruit with no jam on top, another element the children are not fond of.

My biggest problem was the crust. When Mary of One Perfect Bite posted a Blueberry Sourcream Tart I knew she solved my problem. The crust was cookie like. The only ingredient I omitted (which I think would be lovely, but I was playing it safe) was nutmeg.

They absolutely loved it! Here is what they said, "Can you make this again, tomorrow?", "This is the best cake ever!!" "I want you to make this for my birthday!" "Make this for the 4th of July." I think I succeded. Before they devoured the tart, I told them it tasted like a sugar cookie with vanilla pudding and fresh fruit.

So go make this now, you won't be disappointed.

Red and Blue Tart

Cookie crust:
1 1/4 cups all purpose unbleached flour
1/4 tsp. kosher salt
1/2 cup unsalted butter (room temp)
1/4 cup granulated sugar
1 egg seperated

With non-stick cooking spray, spray a 9-inch tart pan with removable bottom.
In an electric mixer bowl mix the butter and sugar together for one minute on medium speed and the egg yolk and mix until blended. Add the flour and salt and mix until just combined on low speed.
On a surface that has been lightly floured, pour the crust out and shape into a flat disk.
Place the disk into the pan and press it out onto the bottom and up the sides of the pan. If it breaks smooth out the cracks. Refrigerate for at least 30 minutes.
While the crust is chilling, pre heat your oven to 375 degrees Farenheit.
With a fork beat the egg white until it is frothy. Lightly brush the crust with egg white. You will not use all of it. Prick the crust all over with a fork and bake for 15 minutes or until set. The crust will not get brown (think sugar cookie). Place on a wire rack until completely cool.
While the crust is cooling make the pastry cream.

Pastry cream:

5 large egg yolks, room temperature

3/4 cup sugar
3 tablespoons cornstarch
1 1/2 cups scalded milk
1/2 teaspoon pure vanilla extract
1 teaspoon almond extract
1 tablespoon unsalted butter
1 tablespoon heavy cream

In an electric mixer bowl fitted with the paddle attachement beat the egg yolks and sugar for 4 minutes on medium-high speed until very thick. Reduce the speed to low and add the cornstarch. With the mixer on low add the hot milk.
Pour this mixture into a medium saucepan and cook on low heat stir this mixture constantly with a wooden spoon until it thickens this took about 7 minutes. Make sure to scrape the bottom of the pan as you are stirring. Don't worry once the mixture comes to boil and looks like it is curdling. Take a whisk and beat it vigorously for 2 minutes. The mixture will become very thick like pudding. Stir in the extracts, butter, and cream. Pour the custard through a seive into a bowl. Place a piece of plastic wrap directly over the surface and chill until cool.

Assemble the tart:

Strawberries cut in half and leaves removed
Blueberries

Take the pastry cream out of the fridge and whisk until smooth. Fill the tart shell with the cream and add the berries in a decorative pattern. Chill for about an hour. Enjoy!

Eleanor Roosevelt's Angel Food Cake with Pink Clouds

At school Ian had been reading Eleanor and Amelia go for a ride. Apparently at the end of the book there is a recipe for Eleanor Roosevelt's Angel Food Cake with Pink Clouds, and Ian of course asked me to make it.

Everyone in our family loves angel food cake, but I have never made one from scratch.

We loved the flavor of this cake, and my family didn't say anything about the texture. I thought the cake could have had more height and been lighter. This was probably more me, than the recipe though. The "pink clouds" are very pretty and add a special touch.

Eleanor Roosevelt’s Pink Clouds on Angel Food Cake

1 cup cake flour (Sift before measuring).

1-1/4 cups egg whites (10 or 12 eggs)
1-1/2 teaspoons cream of tartar
1-1/2 cups sugar
1 teaspoon almond flavoring
1/4 teaspoon salt

Angle Food Cake
Sift flour at least 2 times and set aside.
Beat egg whites with beater until foamy.
Add cream of tartar and 1 cup of sugar gradually to the egg whites. Continue beating until egg whites stand up in peaks.
Add almond flavoring. Sift remaining 1/2 cup of sugar with salt and add flour and very gradually fold into egg whites
Bake in tube pan in 375 degree oven for 30 to 35 minutes.

Whipped Cream and Strawberries (Pink Clouds)

1 pint strawberries cut in half
1/2 pint heavy cream, whipped
2 Tablespoons powdered sugar

Fold berries into whipped cream.
Spoon on top of Angel Food cake.

BBQ Chicken Sandwiches

I probably don't have to tell you that we're the kind of family that loves to cook. Would you believe though that some days, we just don't want to step into the kitchen.

Well, let me introduce you to one of our best friends, the rotisserie chicken.

Now, the easiest way to serve one is right off the bone and sometimes we do.

I was feeling like a sandwich though and came up with this combo.

This is a really nice way to have a delicious dinner that your family will enjoy without having to spend a lot of time in your kitchen.

I actually had about one cup of the bbq chicken leftover and used it the next day for bbq chicken pizza.

BBQ Chicken Sandwiches

This recipe couldn't be simpler. Add more or less of the chicken and bbq sauce to your liking. If you want to get a little fancy, coleslaw on the sandwich would be really good!

1 rotisserie chicken, shredded

*Your favorite bbq sauce (purchased or homemade)

Toasted buns

Place the shredded chicken in a 2 quart sauce pan add as much sauce as you like (we like it really "saucy". Stir well until heated through. Place on toasted buns and serve immediately.

Balsamic BBQ sauce

This is one of our favorite sauces. The kids made it one year for Brian for Father's day.

1 Cup balsamic vinegar

3/4 cup ketchup

1/3 cup brown sugar

1 garlic clove minced

1 tbs. worcestershire sauce

1 tbs. dijon mustard

salt and pepper

Combine all of the ingredients in a small nonreactive saucepan. Whisk until the mixture is smooth. Simmer over medium heat until reduced by one third, 15-20 minutes.

Summer Gatherings

Even though summer doesn't start officially for a few weeks. It takes off in our minds this weekend. I know many of you are looking forward to the lazy days ahead. Summer is the perfect time to gather family and friends together. This can be somewhat stressful, and we do NOT want stress in the summer! I thought I would give you a few tips to make your get-togethers not only fun for your guests, but you as well.

1. Call and invite your guests 3-4 weeks in advance if at all possible and set a date. If your guest asks if they can bring something, say thank you and YES. This helps you out and lets them contribute to the occasion.

Good ideas would be: beverages, chips and salsa, fresh fruit, salad, or dessert Let them know you will call and confirm the time and what they can bring a week before.

2. Plan your menu. I try to make our summer menus pretty relaxed and carefree nothing too fancy, but make sure you have plenty of food and beverages. Bring out the grill! The possibilities are endless with this tool. Everything from appetizers to dessert. Make sure you have enough gas/charcoal. Enlist the help from the men in your life, they love fire. Also take advantage of your grocery store. You can purchase all sorts of dips, olives, cheeses, etc...these little things make life easier for you. Here is a sample of a recent summer menu that we served:

Water, Izzy sodas, Sparkling Wine (guest)

Olives, Hummus and pita bread (purchased)

Assorted gourmet sausages

Kettle Potato chips

Mangoes

Salted Caramel brownies (homemade)

See how easy that is! I made the brownies in advance and Brian grilled up the sausages. Everything else was purchased, but it was still a really nice meal.

3. Clean your home. I know ugh! This is again, where you enlist help and do as much as you can in advance. Try to do a "deep clean" a week ahead of time. This would include: mopping, the bathroom, vacuum, dusting, and general pick up. Katie and Ian are in charge of picking up their rooms. The only thing I don't ask them to do is clean the bathroom and mop. The day of your gathering pick up your home, vacuum, and wipe down the mirror and sink in the bathroom that your guests will use.

4. Enjoy the outdoors. If you have a patio, large yard,deck or porch have your meal outside. It makes your gathering more festive and relaxed. Plus it's summer you want to be outside.

5. The table. I like to use linens, I think it makes a nice statement without being fussy. Over the years I have collected different tablecloths and napkins. I mix and match according to the occasion. I also like to use white dinner plates that can go in the dishwasher and flatware. Again I think it makes the table look special, but if paper and plastic are your thing go for it. I'm very low maintenance about the centerpiece. I might use a potted plant, daisies in mason jars or just candles. If you grow flowers use those.

6. Does your guest list include kids? What will they be doing so they don't get bored? My two love water. Water guns, balloons, pool, or just the hose will do. Outdoor games, balls,bats,etc. Bubbles are fun for little ones or even sidewalk chalk. Make sure to tell your guests to dress appropriately. If it rains...movie, games, wii, drawing/coloring.

7. Music. itunes, pandora, or even cd's. Make sure it is fun and festive and have your playlist ready to last the entire evening.

8. Do as much meal prep as possible the night before. This way your kitchen stays tidy and you have less to do the day of.

9. Checklist. Have one with all of the the tasks you need to do. This way you don't forget anything.

10. Most important have fun! Because you have done so much ahead you don't need to be frantic. Take a nice long shower. Dress comfortably in something nice and cool. I like to have everything done 30 minutes before guests arrive, this way I am nice and calm and ready to enjoy the evening.

The Queen's Room gets a redo

We've lived in our home for almost 10 years now. The "Queen's" room was one of the first we painted and it is ready for an update. It's taken on sort of a "granny" look that I'm not crazy about. This room gets used quite a bit, but I can't help feeling we are not maximizing the space.

This weekend everything is coming out. Yes everything!! After we are done painting, some but not all of the furniture will go back in.

As far as decor this is my inspiration.

I'm thinking creamy/ivory walls with sort of a French country look.

I'll keep you posted.

Honey Ginger Iced Tea

It has been a really lovely week here. Sunny, blue skies, cool breezes, and low 70's.

The weather put me in the mood for a refreshing drink. During the cooler months, especially when we are feeling blue Brian makes us hot ginger tea.

I thought I would surprise him and make an iced version. Brian LOVES iced drinks!

This is a cool, refreshing drink with a little kick. Plus ginger is really good for you. Change up your drink menu this summer, if you like ginger you will love this fun drink.

Honey Ginger Iced Tea

1/2-3/4 cup peeled and thinly sliced ginger

8 cups water

1/2 cup honey (warmed up)

mint for garnish (optional)

ice

Bring the water to boil in a saucepan over high heat. Add the ginger and simmer for 15 minutes. Cover the pan with a lid and let it steep for about 45 minutes to 1 hour. Remove the lid and lightly crush the ginger. Strain the mixture into a heat-proof pitcher add the honey and stir to combine. Place in the fridge until cool. To serve get a tall glass and fill it with ice pour over the iced tea and garnish with mint if desired. Enjoy!

Salted Caramel Ice Cream

For those of you that have been around for awhile you know that I love ice cream, and need no encouragement to eat it. For some reason though, I forgot about my ice cream maker.

I'm going to try to make more ice cream at home this summer. I had the perfect opportunity the other day, because I had leftover salted caramel and some egg yolks left over from making an angel food cake.

I can't pick a favorite flavor it just wouldn't be fair to the others, but this is at the top of the list for sure! Salty caramel + cream = heaven.

Salted Caramel Ice Cream

I use skim milk in my ice cream which is kind of taboo, but it suits us just fine. If you want a more creamy, rich ice cream use whole milk. After the mixture was chilled I notice a skin formed on top. I just stirred it in and once churned there were no problems.

1/2- 3/4 cup salted caramel

1 cup cream

2 cups skim milk divided

5 egg yolks

1 tsp. vanilla or half of a vanilla bean cut in half and seeds removed

Get out a bowl that will hold all of the mixture once it is cooked. In that bowl place 1 cup of the milk,and place a mesh strainer on top of the bowl.

Heat the cream in the microwave until very warm and set aside. Meanwhile place the salted caramel in a 2 quart sauce pan and slowly heat up until warm, slowly add the cream and whisk in.

In a separate bowl whisk the yolks. Slowly add a small amount of the caramel/cream mixture and whisk constantly until combined. Then put the yolk mixture back into the saucepan. Cook the custard using a heatproof utensil stirring constantly and scraping the bottom as you stir until the mixture thickens. I also use a thermometer, when it reaches 160-170 it is done.

Pour the custard through the strainer into the bowl with the milk. Add your vanilla and stir. Refrigerate until thoroughly chilled about eight hours.

Freeze the custard in your ice cream maker according to the manufacturer's directions.

Enjoy!

Simple "Cheater" Churros

Ian came home a few weeks ago with a small post-it note that said "churros" on it. He stuck out his hand and gave it to me and promptly asked if I had heard of churros before. I told him I had heard of them but never tried one. He described in great detail about one of the little girls in his class who had brought them and how delicious they were. Then he asked me so sweetly if I could make them for him. Well, how is a Mom supposed to resist that. So, I was on a mission to find I recipe that I wanted to try.

Traditionally churros are made from a sweet dough and fried, then coated with cinnamon sugar. Many versions also pipe the dough through a pastry bag, so the final outcome looks like a cigar shape. Well I wanted to find a baked version. I looked and looked and finally I found one I thought would be good, but I was not looking forward to pulling out the pastry bag.

But then, Sue from Munchkin Munchies posted a recipe for cheater churros. I decided this would be the way to go.

Oh, and it sure was the way to go. Not only was Ian delighted and excited but the rest of the fam as well. But then, who doesn't love puff pastry coated with butter and sprinkled with cinnamon sugar?? Plus this recipe was so, so easy! The hardest part...remembering to take the dough out of the freezer to thaw in your fridge the night before.

Oven Baked Churros

1 sheet of puff pastry thawed ( I used pepperidge farm)

1/8 cup of sugar

1/2 tsp.cinnamon

2 tablespoons unsalted butter melted

Preheat your oven to 450 degrees. Unfold the puff pastry and cut it half half length-wise. Cut each half into 1-inch strips. I placed my strips on a stoneware pan. If you don't have one, lightly grease a sheet pan and line with parchment paper. Bake for 10 minutes or more until lightly golden brown.

While the churros are baking mix together the cinnamon and sugar. Remove the churros from the oven and using a pastry brush coat them with butter on one side then immediately sprinkle with cinnamon sugar. Let them sit and cool for about 5 minutes. Serve warm.
